Yummy!

Made some really good granola last night.

4.5 cups of oats
1.5 tsp cinnamon
3 tbs brown sugar
1.5 cups chunky peanut butter (estimated)
2/3 cup honey
1.5 tsp vanilla
A couple of handfuls of shredded coconut
A few handfulls of fruit/nuts
(we used a blend of soybeans/dried cranberries/almonds/pumpkin kernels)

Preheat oven to 300 degrees.
In a large bowl, mix oats, cinnamon, brown sugar, fruit/nuts and coconut.
In a smaller bowl, mix honey, peanut butter and vanilla.
Add the wet mixture to the dry and mix thoroughly (mixing with hands works best).
Spread out in a thin layer on a greased cookie sheet.
Baked for about 20-30min (more if you want it crunchier). Stir around the 15min mark if you want loose granola. Don't stir if you want chunks.
If it starts to brown it will taste burnt so watch carefully.
Let cool before storing. Stir again while cooling if you want loose granola. It sets up the most during cooling.

It's a great healthy snack. You can probably leave out the brown sugar and substitute Agave for honey. It's really easy to make however you want. We bought some at our local store that was just oats, cinnamon, coconut, vanilla and honey. We wanted more coconut and some peanut butter so we made our own. A recipe online suggested the brown sugar.

The best thing is we already had all the ingredients in the house.
